|Baked Salmon with Pesto/Orzo on the Side|

|If you enjoy Salmon and the flavor of Pesto, you will love this dish! And it is so easy to prepare. I have estimated the Orzo for 4 servings (along with 4 pieces of Salmon) but you can play around with this, increasing or decreasing amounts.
|4 oz. uncooked Orzo, Jar of prepared Orzo (or make your own), chopped tomato, chopped black olives, 4 pieces/portions of Salmon.
|Cook and drain Orzo. Cool. Toss with 3/4 cups Pesto Sauce. Mix in chopped tomato and black olives. Set aside.
Place each piece of Salmon on generous piece of aluminum foil Spread 1 Tablespoon of Pesto on each piece of fish. Place serving of Orzo mixture next to fish and wrap. Bake at 425 degrees for about 1/2 hour or until fish is cooked through. Serve immediately with salad or vegetable. What a great meal!
