Blue Cheese Bacon Potatoes
| Ingredients: |
4 medium baked potatoes
1/2 cup dairy sour cream
1 ounce blue cheese (1/4 cup) crumbled
1/4 cup milk
4 Tablespoons butter
3/4 teaspoon salt
Dash of pepper
4 slices bacon - crushed
| Directions: |
Bake potatoes 400 degrees for 1 hour or done. Cut length wise and scoop out inside. Mash potatoes and add sour cream, blue cheese, milk, butter, salt and pepper and beat with electric beater until fluffy. Spoon into the potato shells.
Place on baking dish, return to hot over for 15 minutes or until heated through. Sprinkle each with crumbled bacon.
