Description:
This is a nutritious and "plan ahead" way of preparing Oatmeal for friends and family. It can be baked and served warm immediately with milk or refrigerated until needed. Great for serving to kids in the morning rush before school! The sky is the limit as far as using a variety of dried or fresh chopped fruit, seeds or nuts.
Ingredients:
Mix together: 1 1/2 cups milk, 1/2 cup applesauce, 1 tsp. olive oil and 1 egg (or Egg Beater).
Add: 1 1/2 cups Oatmeal, 1/2 cup brown sugar, 1/3 cup raisins (or chopped fruit, sunflower or flax seeds, dried fruit),1/4 cup chopped walnuts or other nuts, 1 tsp. baking powder, 1 tsp. vanilla and 1 tsp. cinnamon.
Directions:
Mix ingredients as directed. Bake in 8" square pan or double recipe for 9 x 13 pan. Bake at 375 degrees for 30-35 minutes or until cooked through.
